We’ve been invited to a barbecue today and as etiquette always states, once must never attend a party with an empty hand! So, I’m making my famous special sugary nut mix – aka. the Black Magic Mix (cuz it’s so so bad for you, but oh so soooo goooood hihihi). Ok, so it’s high in calories as it’s basically sugar and nuts, but it’s delicious and will win even the coldest heart over. ❤
Here what you need!
Ingredients:
- 500 grams mixed nuts (or any other variety of nuts – my favourites are walnuts and cashews NOMNOM!)
- 100 grams white sugar (granulated)
- 100 grams brown sugar
- 1 teaspoon cinnamon (if you like it, you can add more)
- 2 egg whites
- 1 teaspoon vanilla
- Pinch of salt
Preheat the oven to 130 degrees celsius.
Prepare the ingredients in two bowls. You also need a baking tray covered with baking paper, to cook the nuts on.
In the first bowl put the white sugar, brown sugar, cinnamon and ground cinnamon. In the second bowl first beat the two egg whites with the vanilla. Add the nut mix to the egg mix and combine to get a full egg coverage of all the nuts. Then, add the now wet nut mix to the sugary mix and combine until there is full sugar coverage. Put the mix on the baking tray and place in the preheated over. You need to leave the mix in for about 40 minutes – mix every ten minutes or so for even baking. The nuts will be ready when they become a reddish brown and the sugar mixture looks more solid and grainy. Be careful, hot sugar burns baaaad so take care of your hands and your tongue – do NOT lick the utensil you’re mixing the nuts with – you’ll burn yourself! (this is tried and tested advice – it hurts…)
Leave to cool – these nuts taste best when completely cooled to room temperature. They taste best during winter/Xmas season (you know…. cinnamon and Xmas cheer), but they are delicious all year round, so summer bbqs still apply as a good excuse to share them 😉
